Creamy Spinach Ricotta Pasta
Creamy vegetarian pasta with fresh spinach and ricotta cheese. Rich, comforting and easy to make for weeknight dinners.
Ingredients
- 12 oz pasta
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 2 cloves garlic minced
- 2 tbsp olive oil
- 1/4 cup pasta water
- Salt and black pepper to taste
Method
- Cook pasta according to package instructions
- Reserve pasta water and drain
- Heat olive oil in pan over medium heat
- Add garlic and sauté briefly
- Add spinach and cook until wilted
- Stir in ricotta and pasta water
- Add cooked pasta and toss to coat
- Season with salt and pepper and serve
