Creamy Spinach Ricotta Pasta

Creamy vegetarian pasta with fresh spinach and ricotta cheese. Rich, comforting and easy to make for weeknight dinners.

Ingredients

  • 12 oz pasta
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1/4 cup pasta water
  • Salt and black pepper to taste

Method

  1. Cook pasta according to package instructions
  2. Reserve pasta water and drain
  3. Heat olive oil in pan over medium heat
  4. Add garlic and sauté briefly
  5. Add spinach and cook until wilted
  6. Stir in ricotta and pasta water
  7. Add cooked pasta and toss to coat
  8. Season with salt and pepper and serve
