Roasted Vegetable Buddha Bowl

Colorful vegetarian buddha bowl with roasted vegetables, quinoa and creamy tahini dressing. Nutritious, filling and perfect for healthy lunches.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 sweet potato cubed
  • 1 zucchini sliced
  • 1 red bell pepper chopped
  • 1 cup chickpeas drained
  • 2 tbsp olive oil
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Method

  1. Preheat oven to 400°F
  2. Cook quinoa in water until fluffy
  3. Toss vegetables and chickpeas with olive oil
  4. Spread on baking sheet and roast until tender
  5. Mix tahini and lemon juice until smooth
  6. Season dressing with salt and pepper
  7. Assemble quinoa and vegetables in bowl
  8. Drizzle with tahini dressing and serve
