Roasted Vegetable Buddha Bowl
Colorful vegetarian buddha bowl with roasted vegetables, quinoa and creamy tahini dressing. Nutritious, filling and perfect for healthy lunches.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 sweet potato cubed
- 1 zucchini sliced
- 1 red bell pepper chopped
- 1 cup chickpeas drained
- 2 tbsp olive oil
- 1/4 cup tahini
- 2 tbsp lemon juice
- Salt and pepper to taste
Method
- Preheat oven to 400°F
- Cook quinoa in water until fluffy
- Toss vegetables and chickpeas with olive oil
- Spread on baking sheet and roast until tender
- Mix tahini and lemon juice until smooth
- Season dressing with salt and pepper
- Assemble quinoa and vegetables in bowl
- Drizzle with tahini dressing and serve
