Sweet Potato Black Bean Tacos

Vegetarian tacos with roasted sweet potatoes, black beans and fresh toppings. Flavorful, healthy and perfect for meatless nights.

Ingredients

  • 2 sweet potatoes cubed
  • 1 cup black beans drained
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 8 corn tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup sour cream
  • Salt to taste

Method

  1. Preheat oven to 425°F
  2. Toss sweet potatoes with olive oil and spices
  3. Roast until golden and tender
  4. Warm tortillas in dry pan
  5. Heat black beans in small saucepan
  6. Fill tortillas with sweet potatoes and beans
  7. Top with lettuce and sour cream
  8. Serve immediately while warm
