Sweet Potato Black Bean Tacos
Vegetarian tacos with roasted sweet potatoes, black beans and fresh toppings. Flavorful, healthy and perfect for meatless nights.
Ingredients
- 2 sweet potatoes cubed
- 1 cup black beans drained
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- 8 corn tortillas
- 1/2 cup shredded lettuce
- 1/4 cup sour cream
- Salt to taste
Method
- Preheat oven to 425°F
- Toss sweet potatoes with olive oil and spices
- Roast until golden and tender
- Warm tortillas in dry pan
- Heat black beans in small saucepan
- Fill tortillas with sweet potatoes and beans
- Top with lettuce and sour cream
- Serve immediately while warm
