Vegetarian Chickpea Avocado Salad
Fresh vegetarian salad with chickpeas, avocado and lemon dressing. Creamy, healthy and perfect for quick meals.
Ingredients
- 2 cups cooked chickpeas
- 1 avocado diced
- 1/2 red onion thinly sliced
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Method
- Add chickpeas, avocado and onion to bowl
- Whisk olive oil and lemon juice together
- Pour dressing over salad
- Add cilantro and season with salt and pepper
- Toss gently to combine
- Serve chilled or at room temperature
