Vegetarian Chickpea Avocado Salad

Fresh vegetarian salad with chickpeas, avocado and lemon dressing. Creamy, healthy and perfect for quick meals.

Ingredients

  • 2 cups cooked chickpeas
  • 1 avocado diced
  • 1/2 red onion thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method

  1. Add chickpeas, avocado and onion to bowl
  2. Whisk olive oil and lemon juice together
  3. Pour dressing over salad
  4. Add cilantro and season with salt and pepper
  5. Toss gently to combine
  6. Serve chilled or at room temperature
