Vegetarian Eggplant Parmesan
Classic vegetarian eggplant parmesan with marinara sauce and melted mozzarella. Crispy, cheesy and incredibly satisfying.
Ingredients
- 1 large eggplant sliced
- 1 cup breadcrumbs
- 1 cup marinara sauce
- 1 cup shredded mozzarella
- 1/4 cup grated parmesan
- 1 egg beaten
- 2 tbsp olive oil
- Salt to taste
Method
- Preheat oven to 400°F
- Dip eggplant slices in egg then breadcrumbs
- Arrange on baking sheet and drizzle with olive oil
- Bake until golden and crisp
- Spread marinara in baking dish
- Layer eggplant and cheeses in dish
- Bake until cheese is melted and bubbly
- Serve hot
