Vegetarian Eggplant Parmesan

Vegetarian Eggplant Parmesan

Classic vegetarian eggplant parmesan with marinara sauce and melted mozzarella. Crispy, cheesy and incredibly satisfying.

Ingredients

  • 1 large eggplant sliced
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 egg beaten
  • 2 tbsp olive oil
  • Salt to taste

Method

  1. Preheat oven to 400°F
  2. Dip eggplant slices in egg then breadcrumbs
  3. Arrange on baking sheet and drizzle with olive oil
  4. Bake until golden and crisp
  5. Spread marinara in baking dish
  6. Layer eggplant and cheeses in dish
  7. Bake until cheese is melted and bubbly
  8. Serve hot
