Vegetarian Pesto Zucchini Noodles

Light vegetarian zucchini noodles tossed in fresh basil pesto. Low carb, refreshing and perfect for quick meals.

Ingredients

  • 3 zucchinis spiralized
  • 1/2 cup basil pesto
  • 1/4 cup cherry tomatoes halved
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • Salt and pepper to taste

Method

  1. Heat olive oil in pan over medium heat
  2. Add garlic and sauté briefly
  3. Add zucchini noodles and cook 2 minutes
  4. Remove from heat and stir in pesto
  5. Add cherry tomatoes and toss gently
  6. Season with salt and pepper
  7. Serve immediately
