Vegetarian Pesto Zucchini Noodles
Light vegetarian zucchini noodles tossed in fresh basil pesto. Low carb, refreshing and perfect for quick meals.
Ingredients
- 3 zucchinis spiralized
- 1/2 cup basil pesto
- 1/4 cup cherry tomatoes halved
- 2 tbsp olive oil
- 1 clove garlic minced
- Salt and pepper to taste
Method
- Heat olive oil in pan over medium heat
- Add garlic and sauté briefly
- Add zucchini noodles and cook 2 minutes
- Remove from heat and stir in pesto
- Add cherry tomatoes and toss gently
- Season with salt and pepper
- Serve immediately
