Vegetarian Thai Peanut Noodles
Flavorful vegetarian Thai peanut noodles with creamy sauce and fresh vegetables. Better than takeout and easy to make.
Ingredients
- 8 oz rice noodles
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 red bell pepper sliced
- 1 carrot julienned
- 2 cloves garlic minced
- 1 tbsp sesame oil
Method
- Cook noodles according to package instructions
- Whisk peanut butter, soy sauce and lime juice
- Heat sesame oil in pan over medium heat
- Add garlic and vegetables and stir fry briefly
- Add cooked noodles to pan
- Pour peanut sauce over noodles
- Toss until well coated and heated through
- Serve immediately
