Vegetarian Thai Peanut Noodles

Flavorful vegetarian Thai peanut noodles with creamy sauce and fresh vegetables. Better than takeout and easy to make.

Ingredients

  • 8 oz rice noodles
  • 1/3 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 red bell pepper sliced
  • 1 carrot julienned
  • 2 cloves garlic minced
  • 1 tbsp sesame oil

Method

  1. Cook noodles according to package instructions
  2. Whisk peanut butter, soy sauce and lime juice
  3. Heat sesame oil in pan over medium heat
  4. Add garlic and vegetables and stir fry briefly
  5. Add cooked noodles to pan
  6. Pour peanut sauce over noodles
  7. Toss until well coated and heated through
  8. Serve immediately
