Vegetarian Tomato Basil Soup

Vegetarian Tomato Basil Soup

Classic vegetarian tomato basil soup with garlic and olive oil. Smooth, comforting and perfect with grilled cheese.

Ingredients

  • 2 cans crushed tomatoes
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • 1/4 cup fresh basil
  • Salt and pepper to taste

Method

  1. Heat olive oil in pot over medium heat
  2. Add onion and garlic and sauté until soft
  3. Add crushed tomatoes and vegetable broth
  4. Bring to a simmer and cook 20 minutes
  5. Blend soup until smooth
  6. Stir in fresh basil
  7. Season with salt and pepper and serve hot
