Vegetarian Tomato Basil Soup
Classic vegetarian tomato basil soup with garlic and olive oil. Smooth, comforting and perfect with grilled cheese.
Ingredients
- 2 cans crushed tomatoes
- 1 small onion chopped
- 2 cloves garlic minced
- 2 tbsp olive oil
- 2 cups vegetable broth
- 1/4 cup fresh basil
- Salt and pepper to taste
Method
- Heat olive oil in pot over medium heat
- Add onion and garlic and sauté until soft
- Add crushed tomatoes and vegetable broth
- Bring to a simmer and cook 20 minutes
- Blend soup until smooth
- Stir in fresh basil
- Season with salt and pepper and serve hot
